Khaara Paara

Khaara means spicy in Kannada and Paara, i don't know the meaning! I love shakar paara and in blore there is a place called subbamma angadi, where you would get the spiciest khaara paara and i love it! No, i didn't re-create it, he grinds chillies to the paara is my guess. Though i wanted to do that, i ran out of green chillies :(, so made a much milder of the same.. Nevertheless, loved it :D


Khaara Paara







Ingredients
1. Maida/ All purpose flour - 1 cup
2. Butter - 2tbsp
3. White Sesame - 2 tsp
4. Red Chilli powder - 2 tsp
5. Salt - to taste
6. Oil - for deep fry
7. Chat Masala powder - 1tsp (optional)


Preparation Time!!
1. In a bowl, add maida, salt, sesame and red chilli powder and mix
2. Add ghee and mix well, so that ghee coats the entire mixture
3. Add water slowly ( ya very less) to make a stiff dough. It should not be very soft like chapati dough
4. Let the dough rest for 10-15 minutes
5. Then take a medium portion of the dough, smoothen using oil and then drizzle some oil on the chapati making rack ( Idea is not to dust flour on that as it discolors the oil)
6. Make a slightly thicker version of chappati and cut them diagonally first, followed by straight lines to give them the shape of diamond
7. Add the diamond pieces in hot oil & fry till a nice shade of light brown
8. Once cool, add chat masala, red chill powder & salt to these paara's and shake well. It tastes good or you could just much on plain ones too


Pointers
1. Generally, ajwain or carom seeds are added in this! I didn't have it so replaced that with sesame
2. Have heard if you add jeera, it doesn't puff up! I am not too sure of that..


Great snack option & can be had on anytime!!


Serving : 1 medium size bowl
Duration - 40 minutes
