Carrot Kosambari

Kosambari is an integral food of Karnataka. Its easy to make, tastes good & is an our desi version of a salad. This is an integral part of all festive occasions in Karnataka. If its a festivity, a karnataka meal feels so incomplete without Amm Vade, Holige & Kosambari :)


Carrot Kosambari



Ingredients
1. Carrot (grated) - 1cup
2. Moong Dal -  a little more than handful
3. Green Chillies - 2
4. Cilantro - for garnish
5. Lemon 
6. Mustard seeds - to temper
7. Salt 


Preparation Time!!
1. Soak Moong dal for half an hour
2. Drain water, add moon dal, to this add grated carrot, chillies, salt and mix
3. Dry roast mustard seeds in a wok and add to this mixture
4 Mix well, add cilantro and squeeze lemon a little


Its done in a jiffy and tastes awesome & very nutritious :)


Serving - 1 bowl as seen in picture
Duration - 40 minutes (inclusive of soak time; else 10 min flat)
