Eggless Coconut Cake

In Feb, i joined a group called 'Eggless Baking' by Gayatri..The primary reason why i joined this group, apart from my love for baking, is to learn & try out varieties in eggless baking..Its a lil weird..i don't include egg as a part of my diet, but i eat cakes/pastries which has egg in them :D, but when i bake at home i don't use them!! The reason why i don't use them at home is..i always think i should be able to prepare this for my family ( my parents, inlaws), who don't have egg! 


Have been reading quite a bit about egg substitutes & yet to find the perfect one.. this group is helping me experiment..hopefully one day, i am going to post about the best substitutes for egg ;)..
The recipe which was chosen for Feb month was 'Coconut Cake'..I attempted this cake twice..yup! told you was experimenting..For the first time i tried used Saco Buttermilk powder as a egg substitute.. the outcome was decent.. a little dense, but i felt the crumbly moist texture, needed for a cake was missing..So, in my second attempt, i used vinegar & baking soda as a substitute and got a perfect texture of cake.. Can you see the difference of texture in the pics?? :)




Ingredients
1. All purpose flour - 1 cup
2. Baking powder - 1/2 tsp
3. Baking soda - 1 tsp
4. Salt - a pinch
5. Butter - 1/2 cup or 1 stick
6. Sugar - 3/4 cup
7. Vanilla essence - 1tsp
8. Milk (warm) - 1/2cup
9. Water - 1/4 cup
10. Vinegar - 2.5tsp
11. Desiccated Coconut flakes ( unsweetened) - 3/4cup

Preparation Time!!
1a.Pre-heat oven to 350F and keep the tray ready lined with cake liners
1b.Sift All purpose flour, salt, baking powder, baking soda in a bowl
2. Melt butter and add sugar to it and whip till creamy
3. Add vanilla essence to the wet ingredients & mix well
4. Add the butter-sugar mixture to the dry ingredient & mix..It looks crumbly
5. To this add warm milk and make a batter
6. Add vinegar & mix. Don't stir a lot, just about 30-40 seconds to mix well
7. Add the coconut flakes and fold gently
8. Add hot water, if you feel the batter is too thick ( The batter should neither be very thick nor watery)
9. Scoop the contents & pour them into the cake liners & bake close to 15 minutes or until the tooth pick comes clear when inserted..
10. Remove & cool completely and enjoy...

After 12 minutes or so keep an eye on the cake & let it not brown a lot :D

Pointers
* Add vinegar in the last & as mentioned don't stir a lot..You can see fizz, due to the reaction with soda

Serving : 9 cup cakes
Duration : 40 minutes

    1. It was very tasty harini.. i was speculative of unsweetened coconut flakes, but had a mild sweetness, just the way i like them :) Have to try apple cider vinegar, have heard a lot about it..should try!

  3. wow your cupcake looks so moist. i made coconut cake a year ago and i added coconut milk. it gives an extra coconut flavor.

    I tried this recipe today.. My first attempt at baking a cake and hence it didnt go too well.. For one the cake tasted strangely bitter..could it be cos of a little too much of vinegar or baking powder.. Do i have to always use both or can i skip one..
