Simple Cupcakes

I just wanted to bake something & when i started searching for recipes...i went mad! There are so many amazing recipes out there..how could i choose just one :(.. After seeing some more recipes, getting inspired( yup! i need to learn so many recipes) and then had my anxiety attacks ( will i ever be able to learn & most importantly remember them :X)... i decided to go back to my book & choose the most basic cake recipe :)
Simple Cupcakes



Ingredients
1. All purpose flour/Maida - 2 cups
2. Butter - 1/2 cup
3. Oil - 1/2 cup
4. Baking powder - 1 tsp
5. Sugar - 1 cup (Cane sugar is not that sweet, so i included handful more)
6. Vanilla essence - 2 tsp
7. Milk - 1/2 cup
8. Choco-chips - handful (optional)


Preparation Time!!
1. Melt the butter and add the sugar and whip well
2. Once creamy, add oil & essence and mix again well. The liquid mixture is ready
3. Sieve the flour, baking powder and mix well
4. Add the liquid mixture to the flour mixture and just mix them
5. Add milk and mix well to form the batter
6. Add the choco-chips and mix it to fold in
7. Pre-heat pan at 375F and then add batter to 3/4 of the paper cups, placed in muffin pan
8. Bake the cup cakes.Takes around 25-30 min


Pointers
1. You could add milk, if the batter is dry. I didn't add because i wanted to make cup cakes and a little thick batter is what i needed
2. I had Choco-chips and wanted to include them..It nice when you get a little chocolaty taste.Without them also the cakes taste good :)
3. Makes around 12 muffins
4. The outer crust was light crispy and as you bite into it, its very soft.They are not very sweet, so it serves as a tea time snack too!
