Cauliflower Rasam

Rasam or Sathamdhu is something we love. It s to be enjoyed hot and due to our working styles, i mostly don't prepare this on weekdays. There are so many varieties of these and i try to them during weekends. Once such attempt is Cauliflower Rasam. S wanted to have this and told me that MIL does this and i got this recipe from her. Tried it for the first time and its a mild & tasty rasam :)


Cauliflower Rasam



Ingredients
1. Cauliflower - 1/4 cup florets
2. Tomato - 2
3. Coconut - 2tbsp
4. Green chillies - 3-4
5. Lemon Juice - 1-2 tsp
6. Turmeric powder - 1tsp
7. Toor dal - a little more than a fistful
7. Salt -to taste


To temper
1. Mustard seeds - 1 tsp
2. Cilantro - a sprig
3. Ghee -1 tsp


Preparation Time!!
1. Pressure cook the toor dal with water for unto 4 whistles. Once the steam cools off, remove the dal and mash it and keep aside
2. Chop tomatoes, cauliflower florets and add this in a pan along with 2 glasses or 4 cups of water ( If you like cauliflower, you could add more)
3. Add turmeric powder, salt and boil this mixture, till cauliflower is cooked ( takes around 10-12 minutes)
4. Meanwhile, as it is getting done, take coconut & chillies and wet grind them into a smooth mixture
Note : The number of chillies totally depends on the spice level. The chillies i had was not so spicy, plus the coconut also reduces the spicy level right. So, by adding 4 chilli, the spice level was just right.
The rasam is not supposed to be spicy, at the same time not bland too! So, adjust according to your requirement)
5. Once the florets are cooked, add mashed toor dal to the mixture.Keep mixture on medium flame & let it simmer for 1-2 minutes
6. Follow it up by adding the coconut-chilli paste. Add little water ( 1/4 cup) and add to the rasam
7. The rasam is done, when it becomes light frothy and take of flame ( Not a great pic i know :(, just to show what i mean by frothy)




7. In a pan, add ghee.Once warm, add mustard seeds and as it splutters, add to the rasam
8. Add chopped cilantro & squeeze lemon & enjoyyy!


You could mix with rice and have as rasam rice or you could drink it up!


Serving - 2-3 people
Duration - 30-35 minutes
