Lemon Pickle - Pressure Cooker Method

I love pickles, but not a fan of Lemon pickles.. i am a Mango loyalist :D..S loves lemons and here we get really big ones.. Drizzle a little salt & chilli powder, he can keep having them raw all day!.. So, i thought will make pickle at home but the procedure for doing this is elaborate & you need to dry it ....I hardly get sunny days in summer here, so forget it now! Then i saw this recipe in Priya's blog and i knew, i just had to make it!
It's different bcoz its the Pressure cooker method and it tastes really great..i love my mangoes, but i have started liking lemon's too now :)








Ingredients
1. Lemons - 6 (medium sized)
2. Red Chilli powder - 2 tbsp
3. Salt - 2tbsp
4. Oil - 2-3 tbsp
4. Mustard - 1-2 tsp


Dry Roast & Grind
1. Mustard - 1tsp
2. Methi -1tsp
3. Hing - a pinch


Preparation Time!!
1. Pressure cook the lemons in a vessel, with no water for upto 2 whistles* 
2. Meanwhile, dry roast the ingredients mentioned in 'Dry roast & grind' table and blend them into a fine powder. Keep aside
2. Once the lemons are done, remove cool it and then cut them into half
3. Squeeze the juice out in a separate bowl and cut the lemon further into small pieces
4. Then a take pan, add oil. Once warm, add mustard seeds. As it splutters, add the lemon pieces, red chilli powder, salt, the squeezed out juice and the ground powder
5. Mix really well and cook till mixture thickens slightly
6. Cool it & then store in a clean air tight container..


Give a day or two for flavor to mix..we couldn't resist & have been having it every single day now :D


Pointers
**When i say pressure cook, i mean take water in your pressure cooker..the base water to heat your vessel is a must. Take a vessel, put the lemons in it & don't add water in that vessel
Its like pressure cooking veggies or rice, we always take some water in the cooker and then take another vessel, where we add rice or veggies right..in this case, you will take lemons..dont need to sprinkle or add water in vessel! I am emphasizing this..pls don't pressure cook without water..


Serving : 3/4th pickle jar
Duration : 45 minutes

  5. Hi Rasi, same with me. I love my mango pickles or mixed veg ones. But this pickle of yours look nice. This is the first time I have heard about pressure cooking a pickle....the things we need to do living in cold countries :-)

  13. Lemon pickle has always been my favourite. And this recipe is so easy to follow that I am going to try it out. Do I need to prick the lemons before I pressure cook them? I have never used a pressure cooker without water so need to ask this.

    1. Hi Mina..Nope you don't have to prick them.. When i saw pressure cook method.. pls note that there is water in the pressure cooker..just like how you have base water while cooking rice!! In a vessel, take lemons and keep them on water.. don't add any water to that vessel..its like boiling veggies...hope i am clear!! Thanks will join it!

  14. Lemon Pickle!! To me, it has always meant the sun-light dried ones which take some days or even months to go ready before you taste them. Now this is surely an instant delight and I think no one can resist to bookmark it. Too good. :)
