Kothamalli Thogayal/Raw Cilantro Chutney

One of the other staple items in South Indian households in Thogayal..The best way i can possibly explain this is..its a thicker version of a chutney.But we have this by mixing it with rice and ghee/oil!







We prepare two version of Cilantro thogayal and this is a recipe i learnt from my MIL.. Just saute for 5 min and  grind.. and its good to eat :)..If your are like me.. you need something tasty yet dont want to spend too much time in the kitchen, then this one definitely gets our vote!

Ingredients

1. Cilantro - 3 bunches
2. Red Chillies - 4-5
3. Green Chillies - 3-4
4. Mustard seeds - 1 tsp
5. Oil - 1 tsp
6. Tamarind paste - 1 tsp
7. Salt - to taste
8. Hing - a pinch


Preparation Time!!

1. Remove the cilantro leaves from stalk

2. In a pan, add oil and once warm, add mustard, red chillies & hing. Saute till mustard  splutters and transfer to a mixer. Switch of the pan. Now add green chillies & just sauté ( the pan heat is enough)




3.. Transfer chillies to the mixer too. To this add cilantro, tamarind paste & salt



4. Grind using very less water to make a fine paste!
