Panner Butter Masala

I am sure all you bloggers around would definitely know Aarthi of Yummy Tummy! A very passionate blogger with more than 500 recipes and all step wise is commendable right.. Well, the good news is she is getting married this month :)..So a group of us from BM decided we would do a virtual bridal shower for the bride to be! What would be best way to do this, than posting a recipe from her own blog :).. Wish Aarthi & Satheesh a very happy married life & here's a recipe from her blog







Ingredients
1. Paneer - 1 - 1/2 cup cubed
2. Onion - 1/2 cup
3. Tomatoes - 4
4. Butter - 2 tbsp
5. Oil - 1 tbsp
6. Ginger paste - 1/2 tsp
7. Garlic paste - 1 tsp
8. Chilli powder - 1 tsp
9. Corinader- cumin powder - 1 tsp
10. Garam masala - 1/2 cup
11. Kasturi Methi - 1 tbsp
12. Sugar - 1/2 tsp
13. Salt - to taste
14. Milk - 1 cup
15. Cilantro - a few sprigs (Optional)


Preparation Time!!
1. Add onion and tomatoes in a blender and make a puree of this. Strain the puree and 1/4 cup water and keep aside.. Makes around 3 cups of puree



2. In a pan, add oil and once warm, add paneer and sauté till it turns golden brown. Remove and keep aside



3. Then, add the butter and add ginger- garlic paste and to this add the onion-tomato puree. Mix well and let this simmer on medium flame covered for almost 10-15 minutes till the oil separated and the puree thickens



4. When the puree almost thickens, add red chilli, coriander-cumin & garam masala powder. Add salt & sugar and let it simmer for 5 minutes..Add sautéed & crushed Kasturi methi powder. Mix well & simmer for 5 minutes


5. Add the paneer and mix well. To this add milk slowly & keep stirring..(Milk has a tendency to curdle so always add little by little & keep stirring)..


Once milk is added completely, mix well & give it one boil & switch of flame..You can garnish with cilantro.




Serve hot with Roti's or with Dosa or any other Indian bread of your choice.. Tastes good with anything, esp if you are a Paneer lover like me :))


Pointers
1. Another way, which i do is.. skip onions totally & cook tomatoes in butter & G-G paste till mushy.. Cool it & make a puree.. tastes great that way too.. The only thing here is the number of tomatoes used increase quite a bit :)
2. I didn't garnish with cilantro.. you could do it.. No harm!
3. Paneer can be put i  hot water and added directly rather than sautéing them..Fresh paneer is always super tasty & just melts ..
