Rava Masala Dosa

Its almost the end of the second day & here i am posting the dosa recipe, before the next day starts :).. So, i am going to keep my rambles short today.. Amma makes Rava dosa at home, is one of my fav dosa's. I feel there would be a little difference between rava dosa & karachi maavu dosa.. but i have always found the Rava dosa in hotels very different!!

Undoubtedly, its super greasy & thanks to the oil..its super crispy and  very tasty too.. So this time for the rava dosa, i tried the Sanjay Thuma's method & would say it tasted good.. i reduced the amount of oil & i don't have a very big pan, so my dosa was of the regular size! So, here's to the recipe.. Go ahead & tell me what you think of it!!

Ingredients
1. Rava/Semolina - 1 cup ( My cup is 236 ml)
2. Rice Flour - 1 cup
3. Maida/All purpose flour - 1/2 cup
4. Green Chillies - 2
5. Ginger - 1 spoon (chopped finely)
6. Jeera/Cumin - 1 tsp
7. Red Chilli powder - 1 tsp
8. Salt - 1 1/2 tsp ( or as per your taste)
9. Water - 6 cups
10. Curry Leaves - 1 sprig
11. Oil - for drizzling ( takes around 2 - 3tsp)
12. Onion - 1/2 cup

Preparation Time!!

1. In a bowl, add rava, rice flour & maida

2. To this add green chillies, jeera, salt, ginger & curry leaves

3. Mix well & add 2 cups of water first & mix so that lumps are not formed. Then add the remaining water ( 4 cups) to make a watery batter

4. In a pan, add finely chopped onion on the pan & then sprinkle the batter.. Ya, heard it right :).. Sprinkle the batter on the pan just like how you would sprinkle water!! The Pan should be on medium- high mode

5. Add oil along the edges of the dosa & a little in between the holes.. It takes a little longer than the usual dosa  to be done, because we want it to be crisp

6. You know the dosa is getting crispier.. its turning brown in the pics..Place a scoop of Masala in the side & slowly remove the edges of the dosa & fold it..

Enjoy it with sambhar or Molagai podi or just plain :)

Pointers
* I didn't add ginger, because i ran out of it.. It definitely enhances the taste!
** You could skip the onions & make plain rava dosa.. skip the masala too!
*** You could replace the All purpose flour with Wheat flour ( Chapati Atta).. Since i wanted to try the hotel style, i added APF..
