Eggless Apple Cake

Has there been times when you want to eat something & you just wont find them in your fridge.. and when you finally manage to get it.. there seems to be an overstock, which leaves you wondering 'How am i going to finish all of this now??'




This was what led me to bake 'Apple Cake' this week.. Its been a very long time since i have baked and had no plans of doing it too, until we landed up having so many apples at home.. that we were bored of having them in all forms.milkshakes/salads/fruit salad :D.. then it struck me.. why leave poor cake alone ?? 

Thanks to Google.. i landed here. Missed a few items in my pantry..so made a few changes and i agree that this recipe is a keeper!!



Ingredients

1. All purpose flour/ Maida - 2 cups
2. Baking powder - 2 tsp
3. Baking soda - 3/4 tsp
4. Butter - 1/2 cup / 1 stick
5. Sugar - 1-1/4 cup
6. Vanilla essence - 1/2 tsp
7. Food color - a few drops (optional)
8. Curd - 1/4 cup
9. Milk - 1/2 cup + 2tbsp
10. Raisins - 2 tbsp or more
11. Apple - 2 ( peeled & grated)
12. Salt - a pinch

Preparation Time!!

1. Sieve the APF along with baking powder, soda & salt. Once done, add raisins & mix well


2. Whip butter and sugar till creamy. To this add curd and mix well


3. To the above mixture, add vanilla essence, food color and milk and mix well to form the semi liquid batter


4. Add grated apple to the flour mixture and mix well. Slowly add the liquid mixture to the flour mixture and mix well to form a batter



5. Pre-heat the oven to 375 F. Grease the pan with a little butter/spray. I used 9*5 inch loaf pan and fill the batter to half of the pan. Bake for 50 minutes or till a tooth pick comes clean, when inserted in the centre


6. Let it cool for 5 minutes and then place on a wire rack and cool completely. This cake is a little dense but very moist and a tad crumbly.. So make sure you cool it completely, before you cut them to pieces..

Pointers
* The batter is semi liquid, unlike other batters. I added extra 2 tbsp of milk to loosen the thick batter..
** Each oven is different, so check after 20 minutes.. if done as cupcakes, the duration will be def lesser
